Delicious and easy cinnabiscuits! A family favorite.
Note: this makes a "big" batch but its really needed (trust me). You can easily half or double the recipe if needed.
Ingredients
- 4c flour
- 6t baking powder
- ½t baking soda
- 2t salt
- 2c buttermilk
- ~¼c oil (prefer coconut oil but any will work)
- ~⅔c butter (softened but not melted)
- ½c sugar
- 2t cinnamon
- ½c raisins/walnuts/pecans (optional)
Glaze
- ~½c confectioners' sugar
- 1t vanilla extract
- 2-3t milk
Directions
- in large bowl, combine flour, baking powder/soda, salt
- in small bowl, combine buttermilk and oil
- add small bowl ingredients into large bowl and mix until loosely combined
- turn out large bowl contents to a floured surface and kneed 8-10 times to make the dough
- roll out dough into a ~15x9 rectangle
- spread butter over dough liberally leaving ½" around edge of rectangle free of butter
- sprinkle the sugar + cinnamon (and optional raisins/walnuts/pecans) over butter
- starting on one of the long edges, roll up the dough into a log, pinching the end together to close the log
- cut into 1½ inch slices and place tightly into 13x9" glass baking dish
- bake at 400F for 20-25 minutes until lightly browned
While the cinnabiscuits bake, make the glaze in a small bowl:
- combine confectioners' sugar, vanilla and milk (just enough to make it drizzley)
** note: we put any leftover cinnamon/sugar mixture into this bowl, heat it in the microwave for 45s, mix, and let cool in freezer for 5-10m
After the cinnabiscuits are done pour glaze on immediately and dig in!
