Ingredients

  • 3/4 cup buckwheat flour
  • 3/4 cup white flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 buttermilk (add 1T of vinegar to milk if you dont have buttermilk)
  • 1 tablespoon honey
  • 2 large eggs
  • 2 tablespoons oil
  • ~2 cups blueberries
  • sorghum (topping)

Directions

Mix the flours, baking powder, baking soda and salt. In a separate bowl, beat together the buttermilk, honey, eggs, and oil. Stir the dry ingredients into the wet ingredients (mixing only enough to combine) promptly before cooking. Add the berries and pour onto griddle/skillet as you would any pancake.

The secret to these recipe is the sorghum, there is nothing better on buckwheat pancakes so be sure to have a good quality sorghum on hand!
